Fish pudding in the oven

Pudding is a dish that is prepared in a water bath. But this fish pudding is baked in the oven and at the same time turns out as juicy inside, as if cooked in a water bath. It is distinguished only by a ruddy crust on top.

It is also interesting that instead of flour (it is most often found in the list of ingredients for pudding), starch is used here, which makes the fish pudding even more tender.

Ingredients for 6 servings

Cod or hake fillet 9.52 oz
Salmon fillet 8.82 oz
Eggs 4 PCs.
Sour cream or natural yogurt 8.82 oz
Potato starch 1 tablespoon
Lemon (juice and zest) to taste
Salt to taste
Ground black pepper 1 pinch
Parsley or dill 6 sprigs
Breadcrumbs 1 tablespoon
Butter 1 tablespoon

We prepare all the necessary ingredients.
You can take a fillet of any fish that you like, or an assortment of two types of fish (for example, cod or hake and salmon). You can also use 12.35 oz of fish fillet and a jar of canned fish in its own juice (drain the juice).

Fish fillet is washed, dried and cut into small pieces. Pieces of fish fillet are ground into minced meat using a blender or passed through a meat grinder twice. Add starch to the minced fish. We also add sour cream or natural yogurt.

Wash the lemon, dry it and remove about a third of a teaspoon of zest from it. From the same lemon, squeeze out 2 tablespoons of juice.
Add the juice and lemon zest to the minced meat. Don’t overdo it! You can do without the lemon, instead of adding the spices to the fish.

Beat the eggs with a blender and add to the rest of the ingredients.
Turn on the oven to warm up to 356F degrees.

Wash the greens, dry them and finely chop them. We send the greens to the minced fish. Salt and add ground black pepper to taste. Mix well. The baking dish is greased inside with butter and sprinkled with breadcrumbs.

Fill the form with fish mass and send it to the oven preheated to 356F degrees for 30-40 minutes.

We take the finished fish pudding out of the oven and let it cool down a little in the form. Then carefully remove the pudding from the mold.

Decorate the fish pudding with fresh herbs. Pudding can be served warm, but it tastes better cold. Cut the pudding into portions. When slicing the pudding, be prepared for the fact that the juice released from the fish during baking may leak out. Bon Appetit!
