Extra virgin olive oil 1 tablespoon
Jalapeno peppers 2 pieces
Green onion feathers 1 bunch
Blueberries 3 cups
Red onion 1 head
Lime juice 3.5 tablespoons
Coarse salt ½ teaspoon
Crushed Basil leaves ½ Cup
Chopped coriander (coriander) ½ Cup
Chicken breast fillet 35.27 oz (1 kg)
Cayenne pepper to taste
Instruction. Grilled chicken with blueberry and basil salsa.
Cooking time 30 minutes
Preheat the grill. Grease the grill with oil. Put the jalapeno peppers on the grill and fry for about 15 minutes, until the skin is slightly burnt. Transfer to a Board, allow to cool slightly and remove the skin. Finely chop the flesh and seeds (if you do not like very spicy, remove the seeds as well).
Meanwhile, put the green onion feathers on the grill and fry for 3-4 minutes until the strips appear. Transfer to a plate.
In a blender, grind 2 cups of blueberries to a puree. Transfer to a bowl and add the chopped red onion, peppers, lime juice and 0.25 teaspoons of salt. Stir and add the chopped Basil, coriander, remaining berries and olive oil.
Season the chicken with the remaining salt and Cayenne pepper. Put on the grill and fry for 3-4 minutes on each side until cooked.
Place the toasted green onions on plates, top with chicken pieces, pour over the salsa and serve immediately.
