1. The sauce for the steak : chocolate sauce

To make the steak sauce, cut the onion into small cubes and cook in a saucepan in olive oil for about 7 minutes, until it turns a bronze color. Pour the cream into a saucepan and heat over low heat. Mash the Gorgonzola with a fork so that you get pieces of different sizes. Dip the cheese in the cream and cook over low heat for 8 minutes, until most of the gornonzola has melted. Remove the sauce from the heat and add the lemon juice, stirring constantly. Season with nutmeg and white pepper.
