Whisk the whites with salt into a strong foam. Gradually adding sugar, whisk until the mass is sticky and shiny.

Pour in the protein mass of coconut shavings and orange zest. Gently mix.

With wet hands, roll the dough into balls, shape them into pyramids and place on a paper-lined baking sheet. You can plant cookies with a teaspoon, but it is very quick and easy to do it with your hands.

Brush the pan with a little oil. Bake at 320F (160C) degrees for 15-18 minutes. Cool the cookies on a plate.

The cookie will turn golden with a hard crust, but it should remain soft inside.

The finished cookie tops will be ruddy. Remove the dessert from the oven and place in a cookie bowl.

In a water bath, melt the chocolate, add a little milk or cream, stir until smooth and decorate the cookies with drops of chocolate. If desired, sprinkle with powdered sugar when the chocolate hardens.
