Instruction:. Spicy Burger with guacamole and bacon.

Cooking time 50 minutes

Combine the ground beef and chopped chorizo sausage in a large bowl. Mix well with your hands. Form 8 identical-sized cutlets. Season with salt and pepper. Cook in a hot cast-iron skillet over medium-high heat until cooked through to medium rare, about 8 minutes.

To make a spicy guacamole, remove the skin and bone from the avocado and place the pulp in a medium-sized bowl. Chop the avocado with a fork and add the remaining ingredients for the guacamole. Remove the seeds from the chipotle pepper to reduce the burning of the guacamole. Try it and add spices to taste.

To make Chipotle Mayo: grind a second chipotle pepper in a blender, add mayonnaise and 1 teaspoon of milk. Stir until smooth, adding more milk if necessary to make the sauce more liquid.

Collect the burger. Spread the hot mayonnaise on the top and bottom of the bun, lay out a layer of lettuce leaves, tomato slices, guacamole, cutlet, cheddar cheese and bacon. Cover with a bun and serve.

If you like very spicy dishes, you can increase the amount of pepper, for example, add a pickled jalapeno to the burger. Bon Appetit!
