Wash the lentils, fill them in a saucepan with cold water and put them on the stove over a high heat. When the water boils, turn down the heat and cook the lentils until tender, about 30 minutes.

Boil the water and salt it.

Sift the flour into a bowl. Pour the sunflower oil into the flour. Adding salted boiling water to the flour and butter, knead the dough. Collect the kneaded dough in a ball, wrap it in a bag or film and leave to rest for 15-20 minutes. When the lentils are cooked, drain the remaining water. Mash the lentils into a puree.

Finely chop the onion and fry it.

Roll out the dumpling dough into a thin layer. The dough is very plastic, easy to roll out with minimal dusting of flour. Use a round mold to cut out round blanks for future dumplings.

Ingredients for 2 servings

For minced meat:
Cauliflower 0.5 medium head
Onion 1 head
Butter 3.53oz +  for frying
Vinegar 1 tablespoon
Dried Basil to taste
Dried marjoram (gives the taste and aroma of meat dishes) to taste
Salt to taste
Ground black pepper to taste

For choux pastry from whole wheat flour:
Wholemeal flour 1 Cup
Hot water 0.5 cups
Salt 1 teaspoon
Egg (added to the dough for subsequent freezing of dumplings) 1 PC.
Olive oil for greasing hands 1/2 tablespoon

Here’s what we need: half a medium fork of cauliflower, 2 onions-one for minced meat, the other for broth, butter, spices.

To prepare the dough, pour the flour into a bowl, add salt, mix, make a recess and pour boiling water into it. Use a spatula to knead the dough, adding as much flour as the dough takes. If you want to make dumplings in reserve and freeze, then you need to add one egg. Otherwise, the dough will break after freezing.
At the final kneading of the dough, I lubricate them with olive oil with my hands. I wrap the dough in plastic wrap and let it rest while I make the mince.

Peel the onion, chop it finely and marinate it with salt, black pepper, basil, marjoram and vinegar. Inflorescences of cauliflower finely crumble with a knife, you can grate on the largest grater. Heat a frying pan with oil. Fry half of the cauliflower over high heat, stirring constantly.

There are two versions of minced meat: on the left – with raw cauliflower, on the right-with fried.
