Many of you probably raised an eyebrow in surprise, because what can a burger, the main component of which is meat, have to do with vegetarianism? For example, instead of cutlets made from fatty meats, options from legumes (beans, peas) can be used. Ingredients for 4 servings:
Dried bread crumbs 1/4 cup
Ground cumin 1/2 tsp
Ground coriander  1/4 tsp
Dark beans, canned (drained)  29.98oz
Low-fat mayonnaise  1/4 cup
Salt to taste
Ground black pepper
Celery stalk (finely chopped)  2 pcs.
Hot chili pepper (finely chopped)  1 pc.
Salad leaves  4 pcs.
Burger buns (fried in a toaster)  4 pcs.
Tomato slices  4 pcs.

How to make burgers with bean:

Cooking time 20 minutes

1. In the bowl of the kitchen processor, put 2/3 of all the beans, pour all the bread crumbs, cumin, coriander, 1/4 teaspoon of salt and the same amount of pepper, put 2 tablespoons of mayonnaise. Pulse until smooth, then transfer to a large bowl. Add the celery and remaining beans and mix well. Form 4 cutlets from this minced meat.

2. In a large frying pan, lightly drizzle with vegetable oil and heat over medium heat. Place the cutlets in a preheated frying pan and fry the bean cutlets for about 10-12 minutes on both sides.

3. In a small bowl, mix the hot pepper and the remaining 2 tablespoons of mayonnaise. On the base of each of the 4 buns, put one salad leaf, on top of the cutlet and a slice of tomato. Top with the sauce. Cover the burgers with bean burgers with the second halves of the buns.

2.Cauliflower Burger

Ingredients:

Cauliflower 1 head
1/4 cup almond milk
Dried ground garlic 1/2 teaspoon
Paprika 1 teaspoon
1/2 cup breadcrumbs
Red sauce of your choice 1/4 cup
2 pcs Burger buns
Vegan mayonnaise 1 tablespoon
Salt 1/2 tsp
Pepper 1/4 tsp
Lettuce, tomatoes, onions and other burger filling

Cooking time 30 minutes
Instruction:

1. Preheat the oven to 356F. Cut the washed and peeled cauliflower in half. Cut the medium-thick” cutlets ” from each half of the cauliflower.

2. Mix the spices and almond milk. Soak the cauliflower in this mixture. Then cover each piece of cauliflower with breadcrumbs and shake off the excess.

3. Bake the “cutlets” in the oven for about 20 minutes, turning as necessary. At the 20th minute, remove from the oven and pour over the sauce until evenly coated. Return the cauliflower to the oven for about 5 more minutes.

4. Remove from the oven and allow to cool slightly. Assemble the burger by placing lettuce, tomatoes, onions, cauliflower cutlet and vegan mayonnaise between the halves of the bun. Bon Appetit!

These veggie burger sandwiches are made with fried eggplant, tomatoes, and mozzarella.

Eggplant (cut into slices) 1/2
Large tomato (cut into slices) 1 pc.
Mozzarella cheese (sliced) 180 g
Olive oil 3 tbsp
Burger buns 4 pcs.
Salt to taste
Ground black pepper to taste
Fresh basil, leaves 6 pcs.

Instruction:

Cooking time 30 minutes

1. Turn on the oven to preheat to 356F degrees.

2. Heat a frying pan (preferably a grill pan) over high heat, grease with oil. Place the eggplant slices in a preheated frying pan and fry for about 2 minutes on each side.

3. Cut the buns in half. Brush the slices with the remaining olive oil. Put slices of cheese on the halves of the base, top with a tomato and a couple of slices of eggplant, season with salt and pepper to taste. Cover with the second half of the buns.

4. Place the burgers in the preheated oven for 15 minutes, until the cheese melts. Garnish the burgers with basil sprigs.

Ingredients:
Hamburger buns 5 pcs.
Almonds (petals) 1/3 cup
Boiled or canned lentils 1 cup
Carrot 1 pc.
Red onion 1 pc.
Eggs 1 pc.
Olive oil 2 tablespoons
Celery petiole 1 stalk
Lettuce leaves 5 pcs.
Tomatoes 1 pc.
Garlic 3 cloves
Fresh oregano 4 leaves
Lemon zest 1 teaspoon
Salt 1/2 teaspoon
Ground black pepper teaspoons

Instruction:
How to make a burger with lentils:

1.Chop the celery, garlic and oregano.

2. Fry the almonds in a dry frying pan.

3. Cut 4 thin rings from the onion. Chop the remaining onion finely.

4. Thinly slice the carrots.

5.Heat 2 teaspoons of oil in a frying pan. Minced vegetables (carrots, celery and garlic) cook for 4-5 minutes.

6. Chop one of the buns into crumbs. We will need 0.5 cups of crumbs.

7. Add the almonds, oregano, lemon zest, half the lentils, salt and pepper to the crumbs. Grind with a blender.

8. In a bowl, beat the egg. Add it to the ground mixture. Add the unpeeled lentils and sauteed vegetables. Mix thoroughly. Set aside for 20 minutes.

9. Divide the mass into 4 portions. In a frying pan, heat the remaining oil. Form the cutlets, put them in the oil, cook for 3-4 minutes, turn over and cook on the other side for another 3-4 minutes.

10. Cut the tomato into thin slices.

11. Cut the buns, fry the cut side in a dry pan.

12. Place the lettuce leaf on the bottom half, then the lentil cutlet, onion, tomato slice and the top half of the bun.

Ingredients for 4 servings:
1/4 cup olive oil+3 tablespoons
Balsamic vinegar 6 tablespoons
Onion (cut into rings) 4 pcs.
Garlic (minced) 1 teaspoon
Dried basil 1/2 teaspoon
Caps of large mushrooms 4 pcs.
Honey 1 tablespoon
Hamburger buns 4 pcs.
Lettuce leaves 4 pcs.
Slices of fresh tomatoes 4 pcs.
Mozzarella cheese (sliced)
Vegetable oil for greasing the grill grate

Instruction:
1. In a plastic bag with fasteners, mix 1/4 cup of olive oil and 2 tablespoons of balsamic vinegar. Put the onion rings in the bag, shake the bag, fasten and leave the onion to marinate for 30 minutes.

2. Meanwhile, in a small bowl, combine the garlic, basil, and remaining olive oil. Lubricate the mushroom caps with this mixture on all sides, set aside.

3. In a small saucepan, combine the honey and the remaining vinegar, bring to a boil over medium heat, cook, stirring, for about 5 minutes, until lightly thickened. Remove the saucepan from the stove, allow the mass to cool slightly.

4. Grease the grill grate with vegetable oil, and turn on the grill to preheat to medium temperature. Remove the onion from the marinade and dry it on a paper towel. Place the onion rings and mushroom caps on the grill and fry on all sides for about 10-12 minutes.
