In search of delicious sweets without side effects. I found a recipe for carrot dessert. It is ideal for autumn because of its warming qualities. Carrot dessert with raisins.
Carrot dishes are not only delicious, healthy, but also easy to digest. Therefore, carrots are always present even in children’s food. And dishes for adults using carrots are simply hard to count: salads, soups, side dishes, treats, sauces, seasonings, marinades, flour products. Many canned vegetables, meat and fish and, of course, vegetable juices can’t do without carrots.
To preserve all its useful qualities in carrots, you should follow some rules.
Remember that a lot of nutrients in carrots are under the skin, so try to make do with the least removal of the top layer when cleaning. Peel, cut and RUB the carrots shortly before cooking with stainless steel graters and knives.
Cook the carrots in the skin, in a small amount of water and with the lid closed (or even better-for a couple), and lower the vegetable into the already boiling water. Cook the sliced root vegetables for 15 minutes, and the whole ones for 25 minutes.
To preserve useful substances, carrots can be fried in vegetable fat before cooking.
It is very useful to eat carrots raw, without heat treatment.
Carrots go well with almost all foods, especially cereals, other vegetables, and meat products. When preparing dishes, much depends on individual preferences and creative imagination.
Designed for three servings
Grated carrot 12.35 oz
Almond milk 1 Cup
Cashews 15 PCs
Raisins 3 tablespoons(more or less depending on how sweet you like it)
Pistachios 15 PCs
Coconut oil 2 tablespoons
Saffron 4-5 threads
Cardamom 6 pods or ½ teaspoon ground cardamom
Cinnamon 1/2 teaspoon
Nutmeg 1/4 teaspoon
Stevia to taste
Instruction. Carrot dessert with raisins.
The production time of one hour
Wash the raisins and then soak them with saffron threads in almond milk for 15 minutes.
In a saucepan, heat the coconut oil or ghee with spices to a pleasant aroma. Add the grated carrots and simmer until the carrots are soft, about 10 minutes.
Add almond milk with raisins and saffron. Stir and leave the mixture over medium heat until the moisture has completely evaporated, about 20-25 minutes.
Turn off the fire. Add the pistachios and cashews and leave for another 10 minutes.
Add stevia to taste and mix well.
Options: carrot dessert is very versatile. You can eat it simply, you can add it to oatmeal or add more almond milk and whisk in a blender in a carrot thick smoothie. Bon Appetit!
