Macaroni can be taken in any shape and size. It is better to take several varieties of cheese, so that it differs in color and taste. I took the hard Mozzarella and Cheddar.
We cook macaroni and bechamel with cheese at the same time. In a saucepan, boil water, salt it and pour out the pasta. Cook the macaroni according to the instructions on the package, without cooking 2-3 minutes from the specified time. Meanwhile, prepare the cheese sauce. In a saucepan, dissolve the butter and add the flour, mix well with a wooden spoon or whisk the flour with the oil to get a homogeneous dough-like mass. Now slowly pour the milk into the saucepan and actively whisk everything with a whisk, so that the flour is dissolved in the milk. This is what the sauce should look like. Thick and smooth.
Grate the cheeses on a medium grater. Add the cheeses to the saucepan and mix well with a whisk so that the cheese melts. As soon as the mass becomes thick and smooth, immediately remove the sauce from the fire, so that it does not burn: I do not salt the sauce, because the cheeses are very salty, and we have already salted the pasta as well. With boiled pasta, drain the water. Transfer the pasta to the ready sauce. Add all the spices and try the dish. You can already eat macaroni and cheese at this stage. We move on. Spread the macaroni and cheese in the refractory portion of the form. Sprinkle the macaroni with grated cheese on top and send the forms to the oven, preheated to 356F (180 C), for 15-20 minutes.
