Thai style Chicken meatballs with rice noodles

For meatballs:
Minced chicken 17.64oz
Large egg 1 piece
Rice or buckwheat flour 2 tablespoons
Vegetable milk (rice or almond, you can coconut Light) 3 tablespoons
Green onion 3 sprigs
Coriander leaves 1/2 bunch
Sesame seeds 4 tablespoons
Red curry paste 2 teaspoons
fish sauce (used in Thai cuisine instead of salt — if there is no sauce, then you can just take salt) 1 tablespoon
Coconut oil for frying 2 tablespoons
For noodles:
Dry rice noodles 5.29oz
Mango (fresh or 7.1oz frozen) 1 piece
Red bell pepper 1 piece
Coriander leaves 1/2 bunch
Small zucchini 1 piece
Green onion 3 sprigs
Any sprouts 2 tablespoons
Juice of 1 lime
Sesame oil (or cold-pressed rapeseed oil) 2 tablespoons
vegetable sauce (or salt) 1 tablespoon

Gluten-free meatballs:
Finely chop the onion and coriander. Mix all the ingredients well. Heat the coconut oil in a frying pan and spread the meatballs on it, forming them with your hands (so the minced meat will not stick to your hands). Fry the gluten-free rice noodle salad over medium heat until tender (about 10-15 minutes)

Pour boiling water over the noodles and cover with a lid, leave for 3-5 minutes. While the meatballs are frying, finely chop the onion, coriander, mango pulp and bell pepper. Rub the fresh zucchini on a coarse grater. Drain the noodles and mix them with the vegetables, mango, and other ingredients for the rice salad. That’s it!
