Peel and slice 1 large red apple into thin slices. In a frying pan, melt the butter over a moderate heat. When the foam disappears, add the sugar, and stirring, wait until it completely melts (about 1 minute). Put the apple slices in the sugar and fry on both sides until Golden (5-8 minutes).

Beat eggs with a fork and a pinch of salt. Pour the egg mixture over the apples and cook for about 2 minutes, occasionally pushing the lightly toasted edges of the omelet towards the center.
