Oat flakes 2 cups
Bran 1/2 Cup
Powdered sugar 2 tablespoons

Half of the oat flakes will be crushed. Or you can just use oatmeal. In a small bowl, mix the oat flakes (ground and whole), baking powder, cinnamon and bran.
Separate the yolks from the whites. Then whisk the yolks with kefir until smooth. Add the dry mixture to the kefir-yolk mixture. And mix until smooth.
Whites should be whipped with powdered sugar to stable peaks and gently enter them into the dough. Cover the baking sheet with parchment paper and pour the dough on it. We send everything to a preheated 356F (180C) degree oven for 15-20 minutes.
Now prepare the filling. Pour water over the dried apricots and cook for 20 minutes. Then we pass it through a meat grinder or use a blender for this purpose. We do the same with prunes.
Ready-made cakes are divided into 3 parts. Each cake is smeared with mashed apricots and prunes.
