Cooking time 20 minutes
Prepare the ingredients for the salad with peaches, avocado and cheese. This is the most time-consuming stage of cooking, because then we will only cut, wash and connect.
First, prepare the dressing by combining olive oil, salt, pepper, and a few drops of lemon juice in one bowl. If desired, squeeze red currant juice into the sauce instead of lemon juice.
Finely chop the basil and parsley and mix with the other ingredients. You can grind it with an immersion blender, it will be more uniform. Peel and dice the avocado. Sprinkle with the remaining lemon juice.
Wash the peach, peel it and cut it into slices. Chop the tomatoes into oblong pieces, leaving the juice on the board – we do not need it in the salad. Mix the tomatoes, peaches, corn, peas, avocado and dressing in a deep bowl.
The salad is ready, we begin to form a feed. Put the mixed arugula with the root on a presentation plate, and transfer the vegetable salad with peaches and avocado to the salad leaves. Cut the cheese with a curved knife and put it on top.
